Crunchy Pecorino and Prosciuitto Breadsticks

Janine DeMarco is a graduate of the Culinary Institute of America and a pastry chef who has worked with me at Toscana Saporita. I challenged her to create a simple recipe with pecorino cheese and she came up with these delicious breadsticks.

Crunchy Pecorino and Prosciuitto Breadsticks 0 Picture

Ingredients

  • 1 recipe homemade pizza dough
  • (approximately 10 ounces)
  • or store-made pizza or breadstick dough
  • 1/4 cup Pecorino Romano cheese, finely grated
  • 2 thick slices prosciutto, finely diced
  • 2 to 3 tablespoons extra virgin olive oil

Preparation

Step 1

1. Preheat oven to 375. Line a baking sheet with parchment paper.
2. Roll out dough into a 10-inch by 12-inch rectangle shape and cut approximately 10 strips 6 inches long by 2 inches wide.
3. Sprinkle strips of dough with 1 tablespoon of cheese and then with prosciutto, and press down with your fingers to adhere. Fold strips of dough in 1/2 lengthwise and twist, to form breadsticks.
4. Drizzle sticks with extra virgin olive oil and gently roll in finely grated pecorino cheese. Place on baking sheet and bake 10 to 13 minutes or until golden brown. Serve warm with a salad or soup, or cool as a snack or hors d-oeuvre.
