Chicken Cutlets with Creamy Dijon Sauce

Ingredients
- 4 (6 oz) skinless, boneless chicken breasts (thin cut if possible)
- Salt & pepper
- Olive oil
- 3 T. chopped shallots
- 1/2 c. chicken broth
- 1 rosemary sprig
- 3 T. whipping cream
- 2 t. Dijon mustard

Preparation
Step 1
Pound chicken to 1/2-inch thickness if needed. Sprinkle with salt & pepper. Heat oil in pan, then add chicken. Saute app. 3 minutes on each side or till done.
Transfer to a platter. Add shallots to the pan. Saute for 2 minutes. Stir in broth & rosemary, bring to a boil. Cook 2 minutes.
Stir in whipping cream, cook 2 minutes. Remove from heat & discard rosemary sprig. Stir in dijon & pour over chicken.
