Ingredients
- 1 lb. Beef Flank Steak, 1 in. thick
- 1/4 tsp. each Salt, Cayenne & Freshly Ground Black Pepper
- 4 Oval Buns
- 1 Bunch Arugula, trimmed
- 1 Sweet Red Pepper
- 1/4 C. Blanched Almonds, toasted
- 1/4 C. Chopped, Seeded Tomato
- 1 Garlic Clove, sliced
- 2 Tbsp. Fresh Italian Flat Leaf Parsley, minced
- 1 Tbsp. each Tomato Paste, Olive Oil & Red Wine Vinegar
- 1/2 tsp. each Salt & Paprika

Preparation
Step 1
Place red pepper on greased grill over med-high heat; close lid & cook, turning, till charred, 15-20 min. Let cool. Peel & seed. Add to food processor along with almonds, tomato, garlic, parsley, tomato paste, oil, vinegar, salt & paprika; puree till smooth but still with bits of almond. Meanwhile, sprinkle steak with salt, cayenne & pepper. Place on greased grill, turning once, till med-rare, 8-10 min. Transfer to cutting board & tent with foil; let stand for 10 min. before thinly slicing across the grain. Cut buns in half lengthwise. Sandwich arugula, steak & pepper sauce in buns. Serve.
