Ingredients
- 1 can red beans (15 oz) drained and rinsed
- 1 can white beans (15 oz) drained and rinsed (garbanzo or cannelini)
- 1/2 lb fresh cooked green beans
- 2 green onions, sliced
- 1/2 of a large red bell pepper
- 1/2 cup of shredded carrots
- 2 tablespoons (about 8 pieces) of sundried tomatioes, hydrated and chopped
- 1/3 cup of almonds, sliced and toasted
- 1/3 cup of walnuts, chopped and toasted
- 1 to 2 tablespoons of lemon juice
- 3 tablespoons of Italian style salad dressing
- 2 tablespoons of fresh parsley
- salt and pepper to taste
