- 1 cup white whole wheat flour
- 1 cup cornmeal
- 1/2 cup sugar
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1 tsp cinnamon
- 1 cup unsweetened pumpkin puree
- 1/4 cup unsweetened applesauce
- 2 eggs, beaten

Directions
Preheat the oven to 400 degrees and coat your 8×8 inch glass baking dish in cooking spray.
Start by mixing together your dry ingredients in a large bowl – flour, cornmeal, sugar, baking powder, salt and cinnamon.
Whisk together the wet ingredients (beaten eggs, pumpkin and applesauce) in a separate bowl.
Make a well in the center of the dry ingredients and pour the wet ingredients into that spot. Stir together until it is well combined.
Pour into prepared pan and bake for 25 minutes.
