Apricot Onion Raisin Sauce

Ingredients

  • 1/4 c butter
  • 2 Tbs olive oil
  • 1 1/4 # red onion, dice fine
  • 2 Tbs sugar
  • 1/2 c white wine
  • 2 Tbs cider vinegar
  • 2/3 c fresh apricots, chopped
  • 1/2 c dried apricots, chopped
  • 1/3 c white raisins

Preparation

Step 1

Melt butter with oil add onions and sugar, sauté until tender and slightly caramelized
Deglaze with wine and vinegar, reduce by half
Add apricots and raisins, simmer 15 minutes
