Ingredients
- 10 oz dried spaghetti
- 4 tomatoes, peeled, seeded, and chopped
- 1 cup pitted black olives
- 3 oz canned anchovies, chopped
- 3 tablespoons capers
- leaves from a large bunch of flat-leaf parsley, chopped
- 1/4 cup olive oil
- freshly ground black pepper
- 3/4 cup freshly grated Parmesan cheese, to serve

Preparation
Step 1
Bring a large saucepan of water to a boil, then add the dried spaghetti, stir well to separate the strands, and simmer for 9 minutes.
When the spaghetti is cooked, drain thoroughly. Dry the saucepan, then return the spaghetti to the pan and add the tomatoes, olives, anchovies, capers, parsley, and olive oil. Sprinkle with pepper.
Toss the pasta well and serve with a dish of freshly grated Parmesan for sprinkling.
