Ingredients

  • 3 eggs
  • 2 cups sugar
  • 3/4 cups Crisco oil
  • 2 cups all purpose flour
  • 1/2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 tsp cinnamon
  • 3 tsp vanilla
  • 2 cups grated unpeeled zucchini
  • 1 cup chopped nuts (optional)

Preparation

Step 1

Beat eggs well.

Add all ingredients except zucchini and nuts. Mix well.

Fold in zucchini and nuts.

Pour in 2 well greased and floured loaf pans. Bake at 350 degrees for 45 minutes or until done.

May be cooked as muffins or in bundt pan.
