Ingredients
- 1 lb ground beef
- 1 c diced red onion
- 1 t salt, divided
- 2 pkg (3 oz) ramen noodles, any flavor (discard seasoning)
- 1 T unsalted butter
- 1 T flour
- 1 1/4 c milk
- 1/4 t black pepper
- 14 oz diced tomatoes, drained
- 1 1/2 c shredded sharp cheddar cheese
- 1/4 c ketchup

Preparation
Step 1
Heat large nonstick skillet over med high heat. Add beef; cook 2 min or just until beginning to brown. Add onion & 1/2 t salt; cook 8 min or until onion is softened. Transfer to large bowl; cover to keep warm.
Cook noodles according to package directions; drain well. Transfer to large bowl.
Add butter to skillet; melt over med heat. Stir in flour; cook 1 min. Slowly addmilk, stir constatnly. Add pepper and remaining 1/2 t salt; cook 4 min or til thickened, stir constantly. Remove from heat. Add tomatoes, cheese & ketchup; stil until cheese melted. Add sauce to bowl; stir to combine. Serve immediately.
