- 2 fresh poblano chilis
- 2 cups water
- 1 1/2 TBL butter
- 1 tsp salt
- 1 cup long grain white rice
- 1 TBL veg oil
- 1/2 cup chopped onion
- garlic / fresh cilantro
- 1cup can corn
- 1/2 cup sour cream
- 2 1/4 cup sharp cheese

char chilies, wrap in plastic for 10 min, peel, seed & chop.
cook water butter salt &
rice, fluff & cool.
sautee onion & garlic, add chilis and corn to rice.
mix sour cream cilantro some onion and cheese.
Stir all together and bake in greased dish at 325 for 25 min.
