Step 1

Cut a piece of foil large enough to hold each beet. Wash and scrub beets and dry well (I left them on the counter overnight). Lightly oil each beet and wrap individually. Place in large round slow cooker with largest beets on the bottom.

Cover and cook on high for 3 hours, until a knife inserted in the largest beet indicates they are tender. (The cooker started to emit a burning foil smell about 1 hour in. I added about 1/4 cup of water to the bottom, which resolved the problem)

Remove lid and let sit until cool enough to handle. Remove from foil and use a knife to slide or pare off the skin and the root ends. Refrigerate and use in recipe as needed.
