Vermicelli Frittata

Ingredients
- 6 eggs
- 1/2 cup milk or cream
- 1/2 cup grated parmesan cheese
- 1 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup grated cheddar or swiss cheese
- 1/2 cup chopped cooked broccoli
- 2 tbsp chopped fresh parsley
- 3 cups cooked vermicelli noodles, cut up
- 1 tbsp butter or oil

Step 1
In a large bowl, beat eggs with milk, cheese, flour, salt and pepper. Add grated cheddar or swiss cheese, broccoli, parsley and noodles.
Heat butter or oil in a 10" non-stick pan. Add egg mixture. Cook until bottom is set - about 5 minutes, gently shaking to rotate uncooked eggs to the bottom. Reduce heat if bottom is browning too much.
Place under broiler and watch carefully for a few minutes to set the top. Or, slice frittata out onto a large plate and invert back into the pan to cook the second side.
To serve, slide out onto a platter and cut into wedges.
