Chocolate Chip Coconut Crunch Banana Bread

Ingredients
- 1/2 cup oatmeal
- 1/4 cup brown sugar
- 1/2 cup coconut
- 2 tbsp flour
- 1 tsp cinnamon
- 1/2 cup mini chocolate chips
- 1 box yellow cake mix (with pudding in the mix)
- 4 eggs
- 3/4 cup oil
- 1 tsp vanilla
- 2 ripe bananas, mashed
- 1/4 cup chocolate chips (optional)
- 1/2 tbsp unsalted butter (optional)

Step 1
1. Preheat oven to 350F. Grease and flour 2 loaf pans (or use cooking spray). In small bowl, combine oats, coconut, brown sugar, flour, cinnamon and chocolate chips. Set aside.
2. In large mixing bowl, combine cake mix, eggs, oil, vanilla and bananas. Beat on low for one minute to combine and then on medium/high for 3 mins.
3. Spread a quarter of the batter in each prepared loaf pan, leaving half the batter in the bowl. Reserve 1/4 cup of the oatmeal mixture and sprinkle the rest over the batter in each pan. Spread the remaining batter evenly over the oatmeal mixture and then sprinkle the reserved oatmeal mixture over the top of each loaf.
4. Bake loaves for 50-60 mins. Bread is done when a toothpick inserted in the middle comes out clean. Let cool in pans before removing. If desired, place 1/4 cup chocolate chips and 1/2 tbsp unsalted butter in a small dish and microwave on high for about 1 min. Stir together until smooth and drizzle over the loaves.
