Preparation
Step 1
1. Mix concentrate for pineapple juice, ginger ale and quinine water in large punch bowl until well blended. Slide in fruited ice mold. Stir in rum or vodka and grenadine until well blended.
Fruited Ice Mold:
Pour 1/2 inch water, mineral water, or club soda into a 4 cup decorative mold or metal container that will fit well into your punch bowl. Freeze about 20 mins.
Arrange whole blueberries, sliced and whole strawberries around edge and orange slice halves in center of ring mold. Pour over 3/4 cup very cold water and freeze 15 mins or until frozen.
Continue adding water gradually until mold is filled. Freeze 8 hours or overnight.
To unmold, dip mold in and out of pan of hot water or allow to stand at room temperature for 5 mins, then invert onto a cookie sheet. Slide mold into punch bowl no more than 1/3 full. This prevents spill overs. For more fun with ice molds, uses half very cold water and half cranberry juice, lemonade, orange juice or limeade. Or add a little liqueur to your water, such as flavored brandies. Use flavors such as banana, chocolate or almond.
