Potato Chip Cookies

I remember thinking, “potato chips…in cookies?” But it just works…dangerously well. In fact, thanks to the deliciousness of the potato chips, this cookie recipe uses less sugar than most other cookie recipes. As for the butter…well, it’s still got plenty of that. These cookies remind me through and through of Christmas growing up and all the fond memories I have of my Grannie.

Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup crushed potato chips
- 1/2 cup walnuts, finely chopped
- 1/3 cup powdered sugar

Step 1
Preheat oven to 350 F. Line 2 baking sheets with parchment paper and set aside.
Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric hand mixer; beat until whipped and light in color.
Add flour and mix until absorbed into butter. Add potato chips and nuts and mix well.
Roll dough into 1-inch balls, arrange 2 inches apart on the baking sheets, and flatten slightly. Bake for 14-15 minutes or until slightly browned. Sprinkle with powdered sugar
