Sauteed Cod with Puree of Peas

Ingredients

  • 1.5 lbs fresh cod without skin
  • 2 T mustard seed
  • 3/4 lb peas
  • butter
  • salt
  • 1 shallot, chopped
  • 1 c heavy cream

Preparation

Step 1

Cut cod in cubes, sprinkle with mustard seed and marinate for 2 hours.
Put peas in casserole, add a pat of butter, pinch of salt, shallot and 1/2 c. water.
Cook, covered, on medium for about 20 minutes.
Remove 4 T of peas and blend the rest with the heavy cream to a paste.
Put paste thru a sieve.
Melt a pat of butter and sauté cod.
Please pea puree on dish add cod and garnish with remaining peas.
