Ingredients

  • 3 eggs
  • 1 1/2 cup sugar
  • 1 cup vegetable oil
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 2 cups shredded zucchini (about 2 medium)
  • 1 1/2 cups chopped pecans
  • Browned Butter Frosting
  • 28 pecan halves
  • Browned Butter frosting
  • 6 Tbsp. butter, do not use margarine
  • 6 cups powdered sugar
  • 1 tsp. vanilla
  • 8 to 10 Tbsp. milk

Preparation

Step 1

1. Heat oven to 350 degrees. grease bottom and sides of jelly roll pan. 15 1/2 x 10 1/2 x 1 inch, with shortening or spray with cooking spary.

2. Beat eggs, sugar and oil in large bowl with electric mixer on meidum speed, or mix with spoon. Stir in flour, baking powder, salt and cinnamon. Stir in zucchini adn pecans. Spread in pan.

3. bake 30 to 40 minutes or until toothpick inserted in center comes out clean and top is golden brown. Cool completely about 1 hour. Spread Browned Butter Frosting on bars. For bars, cut into 8 rows by 6 rows. top each bar with pecan half.

Frosting:
Heat butter in 4 quart saucepan over medium heat until light adn golden brown. remove from heat. Stir in powdered sugar, vanilla and milk until smooth and spreadable.
