Ingredients

  • For the roast:
  • 1/2 cup Jack Daniel's Whiskey
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp lemon juice
  • 2 tsp garlic powder
  • 1 med onion, diced
  • 5-7 lb chuck roast
  • 1/2 cup bbq sauce
  • For the whiskey butter:
  • 1/2 cup minced onion
  • 2 cloves garlic, smashed
  • 1 jalapeno pepper, minced
  • 1/2 cup Jack Daniel's Whiskey
  • 1/4 cup worcestershire sauce
  • 1/4 cup apple cider vinegar
  • 1 tbsp black pepper
  • 1 tsp dry mustard
  • 3 sticks butter

Step 1

1. For the marinade, combine all ingredients except bbq sauce; mix well. Place roast in double plastic bag, add marinade, seal and refrigerate over night, turning occasionally.

2. When ready, grill roast over med heat using flavored wood chips (apple or cherry, soaked for 2 hours). Grill about 25 mind per side for medium. Baste occasionally with marinade combined with 1/2 cup bbq sauce. Let rest 10-15 mins. To serve, cut into thin slices.

3. To prepare the whiskey butter; in a large sauce pan combine all ingredients except butter, mix well. Bring to a boil and cook for 8-10 mins, reducing by half. Remove from heat, add 2-3 pieces of butter at a time, until all is blended in. Serve at room temperature.
