  • For crust::
  • 3 lobs ricotta
  • 1 cup sugar
  • 1 cup cooked rice (cooked in milk)
  • (add rice to milk, bring to a boil then lower and simmer. 1 cup rice to 1/2 gallon milk simmered slowly, stir often. Tip-cook rice ahead of time and let cool.
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 to 3/4 cup heavy cream
  • Mix everything together-set aside
  • 2 1/2 cup flour
  • 3/4 cup Crisco
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 tsp salt.

Preparation

Step 1

Make crust, roll out and fill two pie plates. Pour rice mixture into pie crusts.
Bake in preheated 350 degree oven 55 to 60 minutes, no more.
