Ingredients
- Salad:
- one 8.5 oz. can red kidney beans, drained and rinsed
- one 8.5 oz. can cannellini beans, drained and rinsed
- one 8.5 oz. can garbanzo beans, drained and rinsed
- 1/2 cup chopped red pepper
- 1/2 cup chopped green pepper
- 1/2 cup chopped orange pepper
- 1/2 cup chopped yellow pepper
- 1/4 cup chopped red onion
- Dressing:
- 3 Tablespoons olive oil
- 2 Tablespoons red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/8 teaspoon salt
- pepper to taste

Preparation
Step 1
Place beans thru onion into a large glass bowl.
Mix together the dressing ingredients and add to beans. Serve with a slotted spoon.
