Salted bourbon-butterscotch fudge

Ingredients
- 1 cup chopped walnuts or pecans
- 3 cups butterscotch chips
- 1 tablespoon butter
- 1 14-ounce can sweetened condensed milk
- 2 teaspoons good bourbon
- coarse salt

Heat the oven to 400 degrees. Spread the nuts over a baking sheet and toast in the oven until golden and fragrant, about 5 minutes.
Line a 9″-x-9″ baking pan with foil and mist lightly with cooking spray.
In a double boiler over medium heat, combine the butterscotch chips, butter and sweetened condensed milk. Stir constantly until the mixture is smooth, perhaps 8 minutes.
Stir in the bourbon then the walnuts. Pour the mixture into the lined baking pan, and quickly sprinkle the salt over top. Allow to rest until reaching room temperature, then refrigerate until completely solid, 2 hours or so.
