Ingredients

  • 1 pound fish fillets
  • 3/4 cups Flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cups water

Preparation

Step 1

Directions
1.Combine all dry ingredients and sift into a medium sized bowl
2.Add water and mix thoroughly.
3.Dip fish in batter until completely covered-let excess batter drip off.
4.Deep fry at 375 degrees until golden brown.

You might try frying in Peanut oil or slow skillet fry using extra virgin olive oil. Both are heart friendly.

Folks, some time ago I was an assistant manager at a LJS. Over the course of a couple of years I asked anyone that I thought knew the secret ingredients for the batter. Try all of the above but this time add a teaspoon of ground mustard and substitute regular water with carbonated water. NOT TONIC WATER

Also if you like ginger (I do) there is a product called Vernor’s Ginger Ale, NOT CANADA DRY, but Vernor’s give a semi-sweet ginger flavor to the fish.
