BEET****Beet and Goat Cheese Dip

Ingredients
- Makes about 2 cups
- 1/2 cup plain greek yogurt
- 3 oz. soft goat cheese, at room temperature
- 1 tbsp. EVOO
- 1 small clove garlic, grated
- 1/2 tsp. ground cumin
- salt to taste
- 3 - 4 roasted beets, grated (I used golden)

Preparation
Step 1
Mash together the yogurt and the goat cheese. Blend in the remaining ingredients and stir well. Grate in the beets, taste and adjust the seasoning. Cover and refrigerate. Warm almost to room temperature before serving.
