Cheesy Garlic Scalloped Potatoes

Ingredients
- 1 (19oz)can of creamy potato with roasted garlic soup
- 1/2 cup heavy cream
- 1 tsp dried thyme
- 1 tsp freshly ground black pepper
- 6 large potatoes, peeled and sliced
- 2 cups shredded Cheddar cheese, divided
- 1/2 cup freshly grated Parmesan Cheese
- 1/4 cup finely chopped Chives or Green Onions

Step 1
1. Preheat oven to 350F. In a blender or food processor, combine soup, cream, thyme and pepper. Process until smooth.
2. Pour a thin layer of the mixture on the bottom of a greased 9x13" casserole dish. Layer 1/3 of potatoes then 3/4 cup of cheddar cheese, then do a second layer of 1/3 of the potatos and 3/4 cup cheddar cheese. Then a final layer of 1/3 of the potatoes on top.
3. Pour soup/cream mixture over the potatoes and sprinkle with remaining 1/2 cup cheddar cheese and 1/2 cup Parmesan Cheese.
4.Bake in preheated oven for 60 mins. Remove from oven and sprinkle with chives and or scallions.
