Ingredients
- Olive oil
- 4 cloves garlic, minced
- Salt & pepper
- 3/4 lb. trimmed green beans
- 8 small red potatoes
- 4 chicken breasts (bone in, skin on)-about 3 lbs.

Step 1
Preheat oven to 450.
In a bowl, toss green beans & potatoes with the olive oil. Salt & pepper to taste. Arrange vegetables in baking dish with potatoes along the outer edges.
In the same bowl, toss chicken pieces in olive oil. Season with salt & pepper. Place the chicken, skin-side up, on top of the vegetables.
Roast for 45-50 minutes. Remove from oven & transfer chicken to separate platter. Add garlic to the vegetables & roast an additional 10 minutes.
