Ingredients

  • 4 boneless, skinless chicken breasts
  • 3/4 cup gluten-free breadcrumbs
  • 2 tablespoons finely chopped parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon 'poultry seasoning'
  • 1 egg
  • 1 teaspoon water
  • Salt and pepper to taste
  • Cooking Spray

Preparation

Step 1

1. Preheat oven to 375 degrees F. Spray a cookie sheet with cooking spray.

2. Slice chicken breasts into strips that are about 1-inch thick.

3. In a mixing bowl, combine gluten-free breadcrumbs, parsley, garlic powder, poultry seasoning, salt and pepper.

4. In a separate bowl, whisk egg with 1 teaspoon of water. Dip each piece of chicken into the egg and then in the breadcrumbs mixture, and then place on the prepared cookie sheet.

5. Bake for 10 to 15 minutes until cooked through to an internal temperature of 165 degrees F and juices run clear.
