  • 1 MEDIUM ZUCCHINI, THINLY SLICED
  • 1/2 SMALL RED ONION, DICED
  • 1 TEASPOON BALSAMIC VINEGAR
  • 4 LARGE BASIL LEAVES, SLICED INTO RIBBON
  • SALT AND PEPPER TO TASTE

Preparation

Step 1

ROAST CORN CAN BE DONE IN OVEN BY PREHEATING OVEN TO 350 DEGREES. LEAVING HUSKS AND SILK ON COB, ROAST FOR 30 MINUTES. ALLOW TO COOL A BIT AND REMOVE HUSKS AND SILKS.
ONCE CORN IS COOLED, CUT CORN OFF OF COBS.
TO CORN, ADD ONION, ZUCCHINI AND BASIL. SEASON WITH SALT AND PEPPER TO YOUR LIKING. DRIZZLE BALSAMIC ON JUST BEFORE SERVING.
