Ingredients

  • 2 t oil
  • 1 bag (16 oz) frozen broccoli stir-fry blend
  • 2 cups cooked chicken, pork or beef, cut in bite size pieces
  • 2 t minced garlic
  • 2 c cooked rice
  • 4 large eggs, lightly beaten
  • 3 T soy sauce
  • 1-2 T rice wine or cider vinegar, optional
  • 2 scallions, sliced, optional

Preparation

Step 1

Heat oil in large skillet . Add frozen vegetables; stir-fry 2 minutes. Add chicken and garlic; cook 2 minutes more. Stir in rice; heat through.

Push rice to one side of the skillet; add eggs and stir-fry 1 minute. Remove from heat; stir in soy sauce and vinegar. Sprinkle with scallions, if desired. Serve with additional soy sauce.
