Ingredients
- 8 corn tortillas
- 1/2 cup chopped onion
- 4 cloves minced garlic
- 1/2 tsp pepper
- 2 tbsp butter
- 3 tbsp flour
- 8 oz sour cream
- 2 cups chicken broth
- 1 or 2 Jalepeno pepper
- 1 cup shredded jack cheese
- 2 cups chopped, cooked chicken
- sliced olives
- diced tomatoes
- green canned peppers

Preparation
Step 1
1. Cook onion, garlic, pepper in butter until onions tender.
2. Stir flour into sour cream and onion to mixture.
3. Stir in broth and chili peppers all at once. Cook all until bubbly.
4. Remove from heat and stir in 1/2 cup of cheese.
5. Stir 1/2 cup of prepared mixture into filling for enchiladas. Place 1/4 cup of filling into each tortilla and roll.
6. Cover and bake for 35 minutes at 350 degrees.
7. Sprinkle with cheese, olives, tomatoes, and green onions then bake for 5 more minutes uncovered.
