  • 1 carrot cake mix
  • 1 ( 8oz) crushed pineapple, drained
  • 2 carrots, finely shredded
  • 2 eggs
  • 2 tbsp canola oil
  • 1 cup chopped pecans

Preparation

Step 1

1. Heat oven to 350F. Line baking sheets w/ parchment paper. In lg bowl, combine cake mix, pineapple, carrots, eggs, and oil. Beat for 4 mins. Stir in pecans.

2. Drop by tsp, 1" apart onto cookie sheets. Bake 14-16 mins, or until edges are golden. Serve warm.
