Piadina with prosciutto

Ingredients
- 3 1/2 c flour
- 1/2 tsp baking soda
- 1 tsp sea salt
- 1 stick room temp. butter
- 10-12 t water
- 2 t evoo
- 1 lb ricotta
- 2 tsp lemon zest
- pepper
- 6 oz fontina cheese, shredded
- 4 oz prosciutto, thinly sliced
- 1 c chopped, fresh basil

Preparation
Step 1
1) combine flour, baking soda and 1 tsp salt in mixer with dough attatchment. add butter and mix about 2 min. on low speed til incorporated
2) with machine running, slowly add water til dough forms. transfer to lightly floured surface and knead for about 5 min.
3) cut into 4 equal pieces. wrap in saran and refrigerate at least 30 minutes
4) place grill pan over md heat, on lightly floured surface, roll dough into approx. 8" circle about 1/8" thick. brush each circle with evoo and grill 4 minutes each side. remove from grill to cool slightly
5) combine ricotta and lemon zest in bowl, season with salt and pepper to taste
6) spread each piadina with 1/4 of ricotta mix. sprinkle with fontina, arrange prosciutto slices
7) cut each into 8 wedges or fold in half and cut in half. garnish with fresh basil
