Caramel Pie (O'Charley's)

Ingredients
- 1 graham cracker pie crust
- 2 cans Eagle Brand Sweetened condensed milk
- 8 oz. cool whip, thawed
- 1/2 cup chopped pecans
- 1/2 cup mini chocolate chips

Step 1
Bake crust for 5 min. at 350°
**Take wrapper off of eagle brand. Place cans in a large cooker on their side and fill with cold water. DO NOT OPEN CANS
Bring to a boil and boil for 3 hours (Keep covered with water). Every 30 minutes turn the cans to the other side. After 3 hours turn the stove off and let them cool for at least one hour or until no longer warm. Open cans and spread caramel in crust. Cover with cool whip then nuts and chocolate chips. Refrigerate 8 hours.
WARNING: KEEP CANS COMPLETELY COVERED WITH WATER AT ALL TIMES. DO NOT OPEN CANS UNTIL COMPLETELY COOLED.
**Alternative Method of making the Caramel from Eagle Brand:
Instructions
OVEN METHOD: Pour 1 can Eagle Brand into 9-inch pie plate. Cover with aluminum foil; place in larger shallow pan. Fill larger pan with hot water. Bake at 425º for 1 hour or until thick and caramel-colored. Beat until smooth.
STOVETOP METHOD: Pour 1 can Eagle Brand into top of double boiler; place over boiling water. Over low heat, simmer 1 to 1/2 hours or until thick and caramel-colored, stirring occasionally. Beat until smooth.
MICROWAVE METHOD: Pour 1 can Eagle Brand into 2-quart glass measuring cup. Cook on 50% power (medium) 4 minutes, stirring briskly every 2 minutes until smooth. Cook on 30% power (medium-low) 20 to 25 minutes or until very thick and caramel-colored, stirring briskly every 4 minutes during the first 16 minutes and every 2 minutes during the last 4 to 10 minutes.
