CARROT****Apple and Carrot Salad

This was surprisingly good for both - when I made it, it just tasted like vinegar and I was sure I'd wind up tossing it but after a couple of hours in the fridge, it really was quite good. The apple really makes it - be sure to cut it into matchsticks. I didn't add the feta the first time but try it next time.

Ingredients

  • 1 medium apple, cored and cut into matchsticks
  • 1 cup shredded carrots (or carrot slaw)
  • 1 1/2 tbsp. lemon juice
  • 1/2 tbsp. EVOO
  • 1/2 tsp. sugar or honey
  • sea salt and pepper to taste
  • 2 tbsp. snipped fresh chives or scallions
  • 2 tablespoons finely chopped fresh parsley
  • 1 oz. light feta cheese, crumbled

Step 1

Place apple in a bowl and toss with lemon juice. Add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly. Serve over arugula or lettuce or as is.
