Ingredients

  • 4-5 small red potatoes, cut into chunks
  • 4 carrots, sliced
  • 1/2 cup diced onion (frozen is fine)
  • 4 cloves garlic, sliced thin
  • 2 (15oz) cans Great Northern Beans, drained and rinsed
  • 2 cups cooked ham, diced
  • 3-4 cups chicken broth, divided
  • 1 teaspoon Italian seasoning
  • 1 tablespoon dried parsley
  • 1/2 teaspoon kosher salt, plus more to taste

Step 1

Add potatoes, carrots, onion, garlic, beans, ham, 2 cups chicken broth, seasonings, and salt to the bottom of a Crockpot. Cook on low 8 hours, or high 4 hours. Stir in an additional 1-2 cups chicken broth and cook for another 30 minutes, or until heated through.
