Chocolate Sauce

Start with a good-quality chocolate, preferably one with 60-70% cocoa solids.

  • 2 tablespoon(s) sugar
  • 4 ounce(s) (60-70% cocoa solids) dark chocolate, broken into small pieces
  • 1.75 tablespoon(s) unsalted butter

Put the cream and sugar in a heavy pan and bring slowly to a boil.

Immediately remove from the heat and stir in the chocolate and butter until melted and smooth.
