Chocolate Sauce

Variation: Boozy Chocolate Sauce.
Add 2 tablespoons rum, Grand Marnier, or another preferred liqueur to the finished sauce.
Variation: Ginger Chocolate Sauce.
Variation: Lavender Chocolate Sauce.
Start with a good-quality chocolate, preferably one with 60-70% cocoa solids.

- 1 cup(s) light or heavy cream
- 2 tablespoon(s) sugar
- 4 ounce(s) (60-70% cocoa solids) dark chocolate, broken into small pieces
- 1.75 tablespoon(s) unsalted butter

Directions
Put the cream and sugar in a heavy pan and bring slowly to a boil.
Immediately remove from the heat and stir in the chocolate and butter until melted and smooth.
