SALMON****Poached Salmon with Creamy Herb Sauce

Ingredients
- Salmon:
- 1 cup dry white wine
- 1 cup water
- 2 tablespoons sliced shallots
- 4 black peppercorns
- 4 lemon slices
- 2 parsley sprigs
- 2 (6-ounce) skinless salmon or arctic char fillets (about 1 inch thick)
- Sauce: Basically just a tartar sauce (which I tweaked by adding some relish and a tsp. or so of honey)
- 2 tbsp. hellman's
- 2 tbsp. fat free mayo
- 2 tbsp. fat-free sour cream
- 1 tablespoon chopped fresh tarragon or 1/2 tsp. dried
- 1 tablespoon chopped fresh parsley
- 1 tablespoon minced fresh chives
- 1 teaspoon chopped fresh dill or 1/2 tsp. dried
- 1 teaspoons Dijon mustard
- 1 tablespoon chopped drained capers
- 1/2 - 1 teaspoon fresh lemon juice
- salt and a pinch of cayenne

Preparation
Step 1
* To prepare salmon, combine the first 6 ingredients in a large skillet; bring to a boil. Add fish to pan. Cover, reduce heat, and simmer 10 minutes (fish may not be completely cooked). Remove from heat. Let stand, covered, 10 minutes. Remove fish from pan with a slotted spoon; place on a dish. Cover and chill. Discard cooking liquid.
* To prepare sauce, combine mayonnaise and next 9 ingredients (through pepper) in a small bowl; cover and chill.
