Ingredients
- 3 TBSP butter
- 1/2 cup diced red onions
- 4 cups shredded potatoes
- 1 1/2 cups slivered ham
- 1 1/2 cups mixed shredded cheese, equal parts sharp cheddar, Jack, and Colby
- 1 cup finely diced mild green chiles, roasted, skinned, and seeded
- 8 eggs, beaten
- 1 1/2 cups heavy cream
- 1/2 tsp freshly ground pepper

Step 1
Melt the butter in a heavy skillet and cook onions until tender. In a large bowl, mix cooked onions, potatoes, ham, chiles, and cheese together, and spread in a 9x13 buttered dish. Beat together eggs, cream and pepper and pour over potato mixture. Bake for 45-50 minutes, or until a knife inserted in the middle comes out clean. Serve with sliced tomatoes.
