Ingredients

  • 1/2 cup dark corn syrup
  • 1/8 tsp. ground cardamom
  • 1 1/2 cups honey
  • 2/3 cup butter
  • 1/3 cup brown sugar
  • 1/4 cup orange juice
  • 1/8 tsp. white pepper
  • Double boiler
  • Roasting pan
  • Aluminum foil
  • 5 to 6 lbs. cooked ham
  • Basting brush

Preparation

Step 1

1 Heat the oven to 325 degrees F.

2 Combine the dark corn syrup and ground cardamom. Stir until the cardamom mixes into the corn syrup.

3 Add the honey, butter, brown sugar, orange juice and white pepper to the syrup and cardamom mixture. Pour the mixture into the top of a double boiler. Heat the mixture until the butter melts. Stir the ingredients frequently, and keep the mixture warm while you bake the ham.

4 Place the ham with the cut side facing down in a roasting pan lined with aluminum foil. Brush the homemade glaze over the ham. Cover the ham with aluminum foil.

5 Bake the ham in the oven for 1 hour and 15 minutes. Baste the ham with the glaze every 10 to 15 minutes. Remove the foil from the ham during the last 5 minutes. Turn the broiler on in the oven to caramelize the glaze. Watch the ham carefully while it broils to prevent it from burning.

6 Remove the ham from the oven. Cover it with aluminum foil and allow it to rest for 10 minutes before you carve it.
