Barley Medley (Barley, Onions, Mushrooms and Asparagus)

Ingredients
- 2 spray(s) cooking spray
- 2 tsp unsalted butter
- 1 medium uncooked yellow onion, chopped
- 1 pound(s) white or bella mushroom(s), chopped
- Large bundle of Asparagus, ends removed, cut into 1 inch lengths
- 3 cup(s) vegetable broth, or mushroom broth
- 1 cup(s) uncooked barley, pearl variety
- 1 tsp table salt and pepper to taste

Preparation
Step 1
It’s a wonderful side dish in place of potatoes or rice.
Coat a heavy saucepan with cooking spray and set over medium-high heat; melt butter in pan.
Add onion; cook, stirring occasionally, about 5 minutes. Remove into bowl large enough for onions, mushrooms and asparagus. Add mushrooms; cook, stirring a few times, until mushrooms release their moisture, about 5 minutes (I put lid on pan to accelerate). Remove in bow with onions. Add asparagus to pan and cook for ~ 5 minutes. Remove and let all the veggies sit until the last set.
In the same pan, Add broth, barley and salt; bring to a boil. Cover pan and reduce heat to low; simmer until barley is tender, stirring occasionally, about 60 to 75 minutes. Turn off heat and let sit until slightly cooled.
Combine all the veggies with the barley, place into a microwave serving bowl and cover. Good dish to make day or two ahead.
When ready to serve, reheat in microwave.
