Ingredients

  • Cream together well. Add:
  • 3/4 cup butter
  • 3/4 cup powdered sugar
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 Tbs evaporated milk
  • 2 cups flour
  • Blend well and roll out on a floured board
  • Cut into squares 2"X1". Place on greased
  • cookie sheets and bake at 325 degrees.
  • 12 minutes or baked.
  • FILLING:
  • 1/2 pound light carmels
  • 1/4 cup evaporated milk
  • Combine and melt over low heat just until
  • melted. Remove from heat. Add:
  • 1/4 cup butter
  • 1 cup pecans, chopped
  • 1 cup powdered sugar
  • Spread on top of cookie.
  • Icing:
  • 2 Tbs butter
  • 1/3 cup evaporated milk
  • 6 oz chocolate chips
  • 1 tsp vanilla
  • 1/2 cup powdered sugar

Preparation

Step 1

1. Cream 3/4 c. butter and 3/4 c. powdered sugar. Add evaporated milk, salt, flour and vanilla. Blend well and roll out on a lightly floured surface. Cut into squares 2X1 inch. Place on a lightly greased cookie sheet and bake in a preheated 325 degree oven 12-15 minutes. Remove from oven and cool on a rack. For the filling, combine the caramels and 1/4 c. evaporated milk. Melt over low heat or in the microwave until caramels are melted. Remove from heat. Add 1/4 cup butter, 1 c. powdered sugar and 1 c. chopped pecans. Spread on top of each cookie. For icing, combine chocolate chips, 1/3 c. evaporated milk butter, powdered sugar and vanilla. Spread over carmel mixture on each cookie and top with a pecan half.
