Ingredients
- Dressing:
- 2 medium zucchini, cut into 1/2" slices
- 1 large green pepper, cut into 1/2" squares
- 1 large sweet red pepper, cut into 1/2" squares
- 1 lb. fresh mushrooms, halved
- 1 large onion, cubed
- 6 medium carrots, cut into 1/4" slices
- 2 c. small broccoli florets
- 2 c. small cauliflowerets
- 1/4 c. olive oil
- 1/4 c. butter, melted
- 1/4 c. minced fresh parsley
- 2 garlic cloves, minced
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper

Preparation
Step 1
Place vegetables in the center of two pieces of double-layered heavy-duty foil (about 18" square). Combine dressing ingredients; drizzle over vegetables. Fold foil around mixture and seal tightly. Grill, covered, over medium heat for 30 minutes or until vegetables are tender, turning once.
