  • 2 tsp oil
  • 1 cup chopped onions
  • 1 cup chopped green peppers
  • 2 garlic cloves minced
  • 2 1/2 cups chopped cooked chickencheese divided
  • 1 10 oz. tub Philadelphia Original Cooking Crème
  • 1 1/2 Mexican Style Finely Shredded Four Cheese divided
  • 2 (10 oz) cans red enchilada sauce
  • 12 (6 inch) corn or flour tortillas warmed
  • 1 tablespoon milk

Step 1

Directions
1) Heat oven to 350F
2) Heat oil in large skillet on medium heat. Add onions, peppers, and garlic, cook and stir 5 to 6 minutes or until crisp-tender. Stir in chicken, ¾ cup each cooking crème and shredded cheese, and ¼ cup enchilada sauce.
3) Dip tortilla in remaining enchilada sauce and gently shake off excess sauce. Spoon ¼ cup chicken mixture down the center of tortilla, roll up. Place seam side down in a 13X9 inch baking dish that has been sprayed with cooking spray or rubbed down with oil. Repeat with remaining tortilla and filling.
4) Cover with remaining sauce.
5) Bake for 25 minutes top with remaining shredded cheese.
6) Mix remaining cooking crème and milk spoon over enchiladas.
