Chocolate Mint Brownies

It was fun to see the layers come together and after the first bite I knew I would be making this again! One of the ingredients for the middle mint layer was Creme DeMenthe. I didn’t have any and looked at my grocery store to see if I could easily find some. They didn’t carry it so I figured out a substitution. I don’t want to list an ingredient that is a pain in the neck to get. So…in place of the Creme DeMenthe I used peppermint extract, a little green food coloring and milk. Worked like a charm!

Ingredients
- Brownie layer
- 1 c. sugar
- 1/2 c. butter softened
- 4 eggs
- 16 oz. can chocolate syrup
- 1/4 t. salt
- 1 c. flour
- Mint Layer
- 2 c. powdered sugar
- 1/2 c. butter softened
- 1 t. peppermint extract
- 2-3 drops green food coloring
- 1 - 2 T. milk
- Glaze
- 6 T. butter
- 6 oz. package chocolate chips

Preparation
Step 1
Preheat oven to 350 degrees. Prepare 9 x 13 pan with non-stick spray.
Cream butter and sugar.
Add eggs one at a time, mixing well between additions.
Add syrup, salt and flour.
Mix well and pour into prepared pan.
Bake for 30 min.
Cool.
Mix all ingredients for the mint layer and spread onto cooled brownies.
Put 6 T. butter and chocolate chips in a microwave safe bowl.
Cook in microwave on high for 1 min.
Stir well until it is melted and combined. Cool slightly.
Spread over mint layer.
May be refrigerated and served cold.
