Ingredients

  • 1

    packet yeast

  • 1 3/4

    cups warm water

  • 5

    cups flour

  • 1/2

    cup olive or other oil

  • 1

    tablespoon salt

Directions

Place water and yeast in a large bowl or bread machine set on dough or appropriate setting. Let stand at least 10 minutes, preferably more. Cover with flour while rising. Knead the dough, adding olive oil and salt. Let the dough stand covered with plastic wrap for at least 1 hour in a warm place. Form into desired shape or shapes and let rise at least another hour (more will not hurt). Brush with olive oil, sprinkle with salt and/or herbs if desired. Bake at 425 for 25 minutes for an entire focaccia. Less for smaller items until the crust is golden and the finished dough sounds hollow when knocked.
