Ingredients
- Cake:
- 3/4 Cup Butter, softened
- 1 3 oz. package Cream Cheese, softened
- 1 1/2 Cup Sugar
- 3 large Eggs
- 1 1/2 Cup Flour, all-purpose
- 1/4 tsp. Baking Powder
- 2 Tbsp. Dark Rum
- Creamy Vanilla Filling:
- 1 3 oz. package Instant Vanilla Pudding Mix
- 1 Cup Heavy Whipping Cream
- 1/2 Cup Milk
- 1/2 Cup Sour Cream
- 1/4 Cup Powdered Sugar
- Caramel Topping:
- 1 Cup Caramel Ice Cream Topping
- 2 Tbsp. Dark Rum

Step 1
Preheat oven to 325 degrees F. Grease and flour a 10 inch loaf pan.
Cake:
In a large bowl with an electric mixer, beat butter and cream cheese at medium speed until creamy. Add sugar, beat until fluffy. Add eggs, one at a time, beating after each addition.
In a small bowl, combine flour and baking powder. Gradually add to butter mixture, beating until combined. Stir in rum. Spoon batter into prepared loaf pan, and bake for 30 to 45 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan, and cool completely on wire rack. Cut into 1-inch cubes.
Caramel Topping:
In a small bowl, combine caramel topping and rum. Set aside.
Creamy Vanilla Filling:
In a medium bowl, combine pudding mix, cream, milk, sour cream, and powdered sugar. Beat with electric mixer at medium-high speed until stiff peaks form. Cover, and chill for up to 2 days.
Assemly:
In martini glasses, layer cake cubes, creamy vanilla filling, and caramel mixture, as desired. Serve immediately.
