Ingredients
- 1 small carrot
- 1 small red onion, halved
- 1 lb ground chicken
- 1/4 C panko
- 1/4 C hoisin sauce
- 1 Tbs grated peeled ginger
- 4 Tbs low sodium soy sauce
- 3 Tbs hot Asian chili sauce
- 8 oz. white mushrooms, thinly sliced
- 2 tsp toasted sesame oil
- Juice of 1 lime

Preparation

Serves: 4
Preheat oven to 375 degrees F. Mist a baking sheet with cooking spray. Grate carrot and 1/2 onion into a large bowl. Add chicken, panko, 2 Tbs hoisin, ginger, 3 tsp soy sauce, 1 tsp chili sauce and mix. Shape into 4 patties. Bake about 20 minutes.
Thinly slice remain 1/2 onion. Toss with mushrooms, sesame oil, lime juice, and remaining 1 tsp soy sauce in a bowl.
Mix the remaining 2 Tbs hoisin sauce and 2 tsp chili sauce with 1 Tbs water in a a small bowl.
