Breakfast Pan Pizza

I love pizza in the mornings, especially for brunch. You can add whatever you fancy, but the EGGS are a must.

Preparation
Step 1
Makes 4 portions
In a bowl, mix water, honey and yeast. Leave it for 5 minutes so that the yeast starts to work.
Add flour, salt, and oil. Work the dough together. Cover with plastic and let it rise for 1 hour. Preheat oven to 400°F. Divide the dough into 4 pieces. Press dough into 4 oiled pans.
Add cheese and half the scallions. Bake for about 5 minutes, take them out and crack an egg in the middle of each pizza. Bake again, until the egg is set. This will take around 6-7 minutes. Once done, add bacon, the rest of the scallions, and tomatoes.
Water that is too hot could kill the yeast, so make sure your water is lukewarm.
