Ingredients

  • 3 eggs
  • 1/4 cup milk
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp salt
  • pinch each of black pepper, dried oregano and dried basil
  • 1 tbsp olive oil or butter
  • 2 tbsp tomato sauce or spaghetti sauce
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup assorted pizza toppings (tomatoes, cooked bacon, ham, sliced mushrooms)

Step 1

Whisk eggs, milk, parsley, salt, pepper, oregano and basil together lightly.

Heat olive oil in a 8" non-stick skillet. Add egg mixture and shake pan gently so that as the eggs begin to cook on the bottom of the pan, the unset mixture on the top is rotated to the bottom. Use spatula gently to help you.

When the eggs are almost completely set, spread the tomato sauce over the top. Sprinkle the cheese and spoon on the toppings of your choice.

Place under a preheated broiler for a minute or two, watching closely, to melt the cheese and brown the top. Or, place a lid on the pan and cook for another minute or two on the stove top just to melt the cheese.

Gently shake pan to loosen omelet and slide onto serving plate.
