Ingredients

  • Mocha Crumb Crust:
  • 1 1/4 cups vanilla wafer crumbs (40 wafers)
  • 1/4 cup sugar
  • 1/4 cup unsweetened cocoa
  • 1 tsp powdered instant coffee
  • 1/4 cup butter, melted
  • Cheesecake:
  • 3 pkgs 8 oz cream cheese (softened)
  • 1 1/4 cups sugar
  • 1 8 oz sour cream
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened cocoa
  • 2 tbs all-purpose flour
  • 3 eggs
  • Chocolate Drizzle:
  • 1/2 cup Semi-Sweet chocolate chips
  • 2 tsp shortening

Preparation

Step 1

Preheat oven to 350 degrees. Put vanilla wafers, sugar, cocoa, and coffee in a food processor. Belnd on high until there are no big lumps of vanilla wafers. Pour into a medium bowl. Add butter. Stir until well blended. Press mixture firmly into bottom and 1-inch up side of 9-inch springform pan. Bake 8-minutes. Cool slightly.

Beat cream cheese and sugar in large bowl until fluffy. Add sour cream and vanilla until blended. Add cocoa and flour. Beat until blended. Add eggs; beat well. Pour into crust.

Bake 50 - 55 minutes or until set. Remove from oven to wire rack. Loosen cake from sides with knife. Cool completely, and remove side of pan. Drizzle chocolate over top. Refrigerate 4 - 6 hours.
